PECORINO I' BLU PINZANI 2.5kg
A marbled cheese obtained by adding selected moulds (penicillium) to the curds whose proliferation is promoted by the piercing of the rind during aging. Covered by a slightly humid rind, it offers a creamy paste marked by blue-grey-green streaks after about two-three months of aging. It releases a special unique bouquet to the nose, with the taste of the marbling and the flavour of sheep milk in perfect harmony. In the mouth it offers a refined but at the same time pronounced taste. Its characteristics are emphasised by a sweet wine like Moscato or Passito.
