The Chianina is a race bovine native Italian in Tuscany and Umbria, which was once used almost exclusively as a working animal and is now bred exclusively for the production of meat, whose name comes from the Val di Chiana.
It is a breed of ancient origins, known for more than 2000 years; in the Etruscan and Roman times it was used in triumphal courtesies and sacrifices to gods.
Chianina is a very large cattle, with a weight that can reach 1,700 kg in males and 1,100 in females, with short horns and black toe.
It is a breed that does not fit well into intensive farming systems , especially for the production of beef and veal sausages ; its high rusticity gives it a great life even to pasture where it is favoured by the long limbs and the ability to eat also foliage.
The most precious meat is that of the female for tenderness. For a number of years, Chianina has been certified and guaranteed by the Hypagus of the White Vitello of the Central Apennines, to offer quality assurance to consumers; this is also because of the risks extinction and counterfeiting of his flesh. This race, together with Podolica, Maremmana, Marchigiana and Romagnola, is protected by the "5R" brand, a quality brand managed by the prestigious Italian Carnivore Producers Consortium.
Chianina provides a lean meat with fat-infiltrating muscle masses that accentuate the taste only in very large subjects and produced by male and female bovine breeds Chianina aged 12 to 24 months.
The most typical product obtained from Chianina is the Florentine steak, a very valuable cut of meat available only from this breed; this cut must be high and weigh more than 1kg. Formation of polypeptides and amino acids give the characteristic flavour of this cut.
The colour of the meat must not show abnormal colouring, such as magenta or blackening, while the colour of the visible fat must not tend to yellow cinerino or should have veins tending to yellow load.
The Chianina meat has remarkable nutrition facts: proteins in excess of 20%, cholesterol of less than 50 mg per pound, a decline in fresh less than 3% and decrease in baked less than 35%, with a degree of hardness very content both raw and cooked. A ratio between saturated and unsaturated fatty acids higher than 1, a very important factor for the prevention of cardiovascular disease that makes it more lean and digestible among European beef, similar to white meat and fish.
The Chianina meat cuts are the back muscle, the bell, the girello, the underpiece, the walnut, the bark, the scamon, the lump, the limb, the belly, the chest, the undergrowth, the actual, the neck front muscle, shoulder girdle, shoulder pulp and back cover.

Shelf life: Up to 3-5 day.
Storage: Keep in the fridge at 4°C. Being fresh, suitable for home freezing therefore if you’re not going to eat it within a day or two, freeze your meat as soon as possible. Once frozen, the best would be to use within a month. despite that being frozen can last up to 6 months or more. Once defrosted use on the day of defrosting. Defrosted beef keep in refrigerator.
