The meat of these fillet steaks comes from organic cattle from the Swabing (Germany) region. Ultimate in succulent buttery tenderness. Cut from the extra tender inside of the Beef Loin on top of which very carefully aged for 28 days on the bone. This very lean cut is the only one we like Blue (i.e. very rare)..
