Taste more sour than sweet, flavour aromatic, texture more melting the firm. The Elstar’s peel is usually a bit russeted and therefore creates light friction on the tongue. On the inside, its moderately firm pulp is pleasing, with agreeable sweet-tartness. Its ripe, fruity notes remind one of pears, citrus fruits and honey; the finish has a slight greenish aroma. The sweet-and-sour flavour makes Elstar especially popular in Germany. It can be used for apple juice, apple strudel, apple sauce and as dried fruit.
